Protein Packed Pumpkin Muffins

Macros (per muffin): 120 cal | 7g protein | 14g carbs | 3g fat

Ingredients (makes 8)

  • 1 cup oat flour
  • 1 scoop vanilla protein powder
  • ½ cup canned pumpkin
  • 1 egg
  • ¼ cup maple syrup
  • ½ tsp cinnamon
  • ½ tsp baking soda

Instructions

  1. Preheat oven to 350°F and line muffin tin.
  2. Whisk pumpkin, egg, and syrup. Add dry ingredients and stir.
  3. Divide into muffin cups, bake 18–20 min.
  4. Cool before eating.
